DANCING PEPITAS
Spicy Roasted Pumpkin Seeds


MAKES ABOUT 1/2 CUP

1 clove, garlic -chopped
1 tablespoon, olive oil
2 teaspoons, ground cumin
1 teaspoon, paprika
1/2 teaspoon, cayenne pepper
1/2 cup, shelled pepitas (pumpkin seeds)
1 teaspoon, Kosher salt


Preheat oven to 300 degrees. Heat the chopped garlic in the olive oil over low heat for 5 minutes, without browning the garlic. Remove the garlic from the oil with a slotted spoon, and discard garlic. Then add the cumin, paprika and cayenne to the garlic-flavored oil and cook, stirring constantly, over low heat until fragrant - about 1 minute.

Place the pepitas on a baking sheet, scrape the spice mixture over them, sprinkle with the salt, and toss to coat the seeds evenly with the spices and salt. Spread the pepitas out in a single layer on the pan, and bake at 300 degrees for about 5 minutes or until lightly colored. The seeds will pop and dance while cooking (hence the name).

Enjoy “Dancing Pepitas” out of hand, or use to garnish corn chowder or pumpkin soup.
